Answer · A short answer
How do you cut restaurant no-shows?
Treat a peak table as stock that expires. Confirm every booking as it is made, remind guests before the day, and make cancelling one tap so people tell you instead of just not coming. Release tables that are not confirmed by a set time, and refill them from a waitlist. Take deposits for large parties and your busiest nights, not for every booking.
Why guests do not show
Most no-shows are not rude. People book two places and decide later, forget, or find cancelling more effort than not turning up. Every one of those is easier to fix than a guest who simply does not care.
So the job is to make showing up, or cancelling, the easy option.
Confirm, remind, make cancelling easy
Send a confirmation the moment the booking is made, with the time, party size and a simple way to cancel or change it. Send a reminder the day before that asks the guest to confirm. For your busiest slots, send one more a few hours before.
Put every booking in one book. A table promised by a manager on the phone, or booked through a social message, is a no-show risk if the host stand never hears about it.
Release and refill on a rule
Decide in advance how long you hold an unconfirmed table and how long you wait for a late party. When the time passes, the table goes to the next guest. The host should not be deciding that on feel in the middle of service.
A table you release is only worth something if someone takes it. Keep a waitlist for peak nights, and contact it in a fixed order the moment a table frees up.
Deposits, used carefully
Deposits work best where a no-show costs the most: large parties and your highest-demand nights. Taking one for every booking can put off the regulars you want. Explain it clearly, take it off the bill, and give a fair window to cancel.
Then measure it. Count no-shows and late cancellations by night and by booking source, and see which change actually moved them.
Put in your own covers and spend and see what no-shows cost you. Work out your no-show cost.
